PB Cookie Dough Protein Balls (Sugar-Free, Vegan)

I wanted to create a quick snack that was based on protein, fat and fibre and that was sugar free. These are full of fibre with the oats, nuts and hemp hearts while giving you the protein and healthy fats to balance blood sugar and keep me and my clients feeling full and satiated for hours in between meals. Skip to the bottom for my easy to follow video!


First, you will blend the oats into an oat flower, add the cashews (or other nut, make sure you are always using raw nuts!) and blend with oats.

Add in the rest of the ingredients, except the coconut oil, blend for 1 minute or until combined.

Add the coconut oil, teaspoon by teaspoon until it reaches your desired smooth texture.

Place in the fridge for 10 - 15 minutes to set up, this will make it easier to roll into balls. Once firm, roll the mixture into balls, I like to use about a teaspoon each ball.

Sprinkle with additional cinnamon or cocoa :)

Store in fridge or freezer for on-the-go protein, fat and fibre packed snacks!

Peanut Butter Cookie dough Protein Balls

Ingredients:

  • ½ cup oats

  • ¼ cup cashews or other raw nuts

  • ¼ - ½ cup PB or nut butter

  • ¼ cup protein powder, I used Purica's Vegan Protein Powder

  • 2 tsp cinnamon

  • 1- drops stevia or lucuma powder

  • 1-2 tsp coconut oil (add more if mixture isn’t creamy enough)

  • 2 tsp vanilla

  • 2 Tbs hemp seeds (optional)

  • dash sea salt

  • Additional cinnamon or cocoa to top with

Instructions:

  1. In food processor, blend up oats until ground, add cashews and blend until roughly ground.

  2. Add in the rest of the ingredients except coconut oil and blend.

  3. Add coconut oil by the teaspoon until at desired consistency. Place in fridge for 10 minutes.

  4. Form into balls store in fridge or freezer.
